Homemade Corn Tortillas


2 cups instant corn masa
1 1/8 cup water
1 tsp table salt
1 lg. plastic zip top bag

1.    Stir water and salt into masa. Stir 2-3 minutes until a dough ball forms. If the dough is dry add a little water so that the dough is slightly tacky.
2.    Heat a large skillet to high heat.
3.    Divide dough into slightly smaller than golf ball size balls. Keep dough covered with plastic wrap.
4.    Cut a large freezer or zip style bag so you have 2 pieces of plastic.
5.    Place one piece of plastic on bottom of tortilla press. Put ball of dough slightly off center nearest hinge and cover with second piece of plastic.
6.    Flatten slightly with hand then press. Open and rotate tortilla inside plastic a ¼ turn and press again. Repeat. Don’t make them too thin.
7.    Gently peel plastic from one side of tortilla. Lay tortilla on a flat hand and peel off plastic.
8.    Flip tortilla onto hot pan and cook 20 seconds, turn for another 20 seconds and again for another 20.
9.    Place hot tortilla inside a clean folded kitchen towel to keep warm. If tortillas need warmed before eating just place on hot pan for 10 seconds on each side.
Makes about 15 tortillas
