3" fresh ginger
1 1/4 cup fresh squeezed lemon juice
1 cup sugar
1 cup water
8 more cups of water
With the side of a teaspoon scrape the peel off the ginger. Slice ginger thin and place in a jar or lidded container. Boil 2 cups of water and pour over ginger. Put lid on and steep for 10-15 minutes. Pour through a stainer to remove ginger and chill.
Dissolve 1 cup sugar in 1 cup water, cool then chill. (This is called "Simple Syrup". Use it whenever you need to sweeten chilled drinks.)
Squeeze lemons. I run mine through a course strainer to remove big pieces and seeds but I like some of the pith in it.
Combine lemon juice, simple syrup and ginger water. Add 6 cups of water. Taste it to make sure it's just how you like it. I like mine a little more sour than sweet. Adjust if needed. Chill it well then serve over ice.
