1 large russet potato
Non stick cooking spray
Salt
Fill a large bowl with cool water
Cut end off potato. With mandolin* set on thinnest setting slice potato.
Put cut potatoes in water while you continue to slice potatoes.
Lay out 2 layers of paper towels and lay potatoes in single layer. Roll paper towel up to allow potatoes to dry without being exposed to the air. Repeat as needed with more paper towels.
Spray a microwave safe plate with non stick cooking spray. (i use two plates. Prep one while the other is cooking) In a single layer place potato slices tight together but not overlapping. Keep unused potatoes rolled up. Spray potatoes with non sick spray and sprinkle with salt.
Place in microwave for 4 minutes on high. Check at 3 minutes. Potatoes should mostly brown. PLATE WILL BE HOT! Remove plate and set aside for a few minutes then with a spatula put chips in a bowl if they haven't been eaten yet.
For sweet potato: peel sweet potato, cut end off and slice on mandolin. Follow direction above. I seasoned with a little salt, cayenne and brown sugar. The brown sugar wanted to burn but that doesn't mean it didn't taste good. I'd stick with one or the other so you can make a lot. They will be popular.
*Don't have a mandolin? Use a vegetable peeler. Cut potato length-wise. Using peeler begin to shave off thin slices of potato and follow directions above.
