Goat Cheese & Sun-dried Tomato Bites

1 sheet puff pastry, cold but thawed (Follow directions on the box.)
1/4 cup chopped sun-dried tomatoes (I like the ones in oil best. No need to dry them off.)
1/4 cup crumbled goat cheese or any crumbly cheese you like
1 slice cooked bacon, diced (bacon can easily be omitted)
2 large fresh basil leaves, chopped
1 egg yolk, beaten with 1 tsp water

Heat oven to 375.
On a lightly floured surface roll out pastry sheet just to enlarge a little.
Cut into 9 equal sized squares. (I use my pizza wheel here) Leave in place while adding filling.
Near but not quite the center of each square add a little of the tomato, cheese and bacon if using. Top with some basil. 
Brush 2 of the edges of each square with a light coat of the egg wash.
Fold over dough to form a triangle. Doesn't have to be prefect just make sure filling is sealed inside well. 
Remember you want your dough to stay as cold as possible so work quickly especially if your kitchen is hot.
Transfer to a lightly sprayed cookie or sheet pan or one lined with parchment (my preference). 
With a fork press lightly to seal up the edges and give a pretty look to the pastry.
Brush each pastry triangle with the egg wash.
Bake about 16-20 minutes or until golden brown.
These taste best slightly warm or at room temp. Fresh out of the oven they are too hot to appreciate all the flavors.
